expressivesole cooks: shrimp quesadilla and guacamole

Baja Shrimp Tacos: I used this recipe for the shrimp but omitted a lot of ingredients and eyeballed the ingredients

~1lb shrimp
eyeballed: garlic powder, chili powder, black pepper, and cayenne pepper
2 tsp olive oil
(toss everything into a zip lock bag, shake, and marinate for ~30 minutes)
After marination, cook shrimp until pink and set aside

I baked the tortilla for ~2 minutes to get it semi-crispy and then take it out and place shrimp and shredded mozzarella on the tortilla, fold it in half, and then bake the quesadilla until I get the outer tortilla nice and crispy with a semi-brown coloring.

Quacamole (everything is eyeballed and to my taste)
1 avocado
lemon juice (freshly squeezed)
Mix everything in a bowl and keep tasting until your liking
