p.s. Mr. Best Boyfriend brought 30 of these cupcakes to work and they loved it. There was a request for bacon on the next batch but I’m already craving a different type of cupcake. Thank goodness I can make a dozen + cupcakes and keep 4 for myself and then the rest goes to work guinea pigs!

expressivesole cooks: strawberry salad and lemon garlic parsley drumstick

Strawberry Salad:
Same recipe as the Peach Salad but substitue the peaches with strawberries! I personally think that I like the Peach Salad more than the Strawberry Salad (I think the tanginess of the strawberries didn’t go well with the salad that I made).

After thinking and thinking about what to pair my salad with, I was stumped. I didn’t want to go out and buy ingredients, I just wanted to use what I had in my pantry. After looking through my freezer, I found these chicken drumsticks laying in the back. Now, I was stumped as what to do with them.

I seriously just took fresh lemon, fresh minced garlic, and dried parsley and dumped it on the chicken drumsticks. I squeezed more lemon and garlic on half way through the cooking process in the oven.

Peach Salad:
1/2 peach (but the peach was humongous, so may need to use 1 whole peach)
1/2 avocado
1 tomato
4 slices of turkey bacon (baked)
garden salad
2 eggs (boiled)
shredded cheese
Mix all together and serve (I would leave the mozzarella and vinaigrette on the side)


Baked Seafood Soup with Puff Pastry
I followed the recipe exactly and it turned out like heaven, it’s easy and delicious. The only thing I did change was I put the butter in after I had already semi-sauteed the onions, it was because I had forgot about the butter. For the white wine I used chardonnay from Trader Joe’s (it was only 1.99) – it’s such a small about of white wine that there is no need to pay for an expensive bottle. The seafood mix I used contained baby scallops, mussels, and shrimp.

Mr. Best Boyfriend and I agreed that the puff pastry still needed to be baked a little bit more because it still tasted a bit doughy, but overall the meal was delicious. I still have a lot of puff pastry left, peach puff pastry dessert next?


expressivesole cooks: shrimp orzo risotto

Ever since Mr. Best Boyfriend and I have started our daily at home meals, we have decided to try to use up all the ingredients we have bought in two weeks, incorporate them into two different meals. For example, one week we will use mushrooms in a risotto and the next week we will use the mushrooms as a pizza topping – this ensures that we don’t waste food or money.

Shrimp Orzo Risotto
I did not use an exact recipe for this dinner but instead just used my senses.  I know the ingredients I used included: mushrooms, red bell pepper, onions shrimp, orzo, heavy cream, salt and pepper, shredded parmesan, and chicken broth.

I boiled the orzo until soft and while that was cooking, I sauteed the mushroom, red bell pepper, and onions. After everything is cooked, I pour the chicken broth into the saute pan along with the mushroom, red bell pepper, and onions, and then I add the already cooked orzo into the saute pan. After it boils, add ~2 tbs of heavy cream and bring to a boil while stirring. I then season the shrimp with pepper and salt to taste and cook until pink. I think chop up the shrimp and add to the orzo. Done! A perfectly yummy dinner.


p.s I am getting really good at this thing called cooking.

expressivesole cooks: shrimp quesadilla and guacamole

Baja Shrimp Tacos: I used this recipe for the shrimp but omitted a lot of ingredients and eyeballed the ingredients

~1lb shrimp
eyeballed: garlic powder, chili powder, black pepper, and cayenne pepper
2 tsp olive oil
(toss everything into a zip lock bag, shake, and marinate for ~30 minutes)
After marination, cook shrimp until pink and set aside

I baked the tortilla for ~2 minutes to get it semi-crispy and then take it out and place shrimp and shredded mozzarella on the tortilla, fold it in half, and then bake the quesadilla until I get the outer tortilla nice and crispy with a semi-brown coloring.

Quacamole (everything is eyeballed and to my taste)
1 avocado
lemon juice (freshly squeezed)
Mix everything in a bowl and keep tasting until your liking
